Food specialties of Rome: fritto misto alla romana

Rome offers many tasty food specialties: one of the most famous is the “fritto misto alla romana”, or mixed fried, a typical Roman street food.

The basic ingredients are entrails, which are removed during the butchery; they represent the “poor” part of the animals, in fact, mixed fried is a poor and rustic specialty. The principal ingredients are brain and offal, to which are added the typical artichokes. The preparation is not so easy but it guarantees a great result! Brains are at first boiled, then, once cooled, marinated with olive oil, lemon juice and parsley. Artichokes are cut and then marinated in lemon juice.

There are many variations of mixed fried: for example, offal can be replaced by mozzarella or provolone sticks, while zucchini flowers are often used instead of artichokes.
